Vinification: In the cellar, the grapes are destemmed and thenÂ transferred to stainless-steel vessels, where they remain at aÂ temperature of 10Â°C for 24 hours before pressing. The resultingÂ must undergoes cold static clarification and is then fermentedÂ in stainless-steel tanks by the addition of cultured yeasts at aÂ maximum temperature of 17Â°C. Following fermentation, the wineÂ is racked and the lees stirred for about 4 months, after whichÂ it is filtered and bottled, where it is aged for a month before itsÂ release.
Sensory characteristics: Clear straw yellow colour with subtleÂ greenish highlights. The elegant citrussy nose is followed by aÂ balanced, well-orchestrated palate with good length.
